Ingredients:

1. Cupcake
2. 1 box Pumpkin Bread & Muffin Mix
3. 2 large Eggs
4. 1/2 cup Vegetable Oil
5. 1 cup Water
6. Frost
7. 10 1/2 oz Lemon Curd (Click on the search icon for more info ->)
8. 8 oz Mascarpone Cheese (or regular cream cheese)

Preparation steps:

1. Prepare the Pumpkin Bread & Muffin mix. I used Trader Joe's one, but you can use any from your local grocery store. Or, you can use any pumpkin bread recipe and do it from scratch.

   

2. Mix water, eggs and oil together (that's what my bread mix says.). In this step you basically follow the instructions on your pumpkin bread mix.

   

3. Add the bread & muffin mix

   

4. You can either bake it in a cake pan or use muffin / cupcakes pan. Spoon batter into well-greased and floured pan or paper lined muffin pan cups. Fill about 2/3 full.

   

5. Bake at 400°F for about 18-20 min or until a wooden pick inserted in the center comes out clean. I reccomend to follow the instructions that your bread mix box says.

   

6. While the cake/cup cakes are baking, prepare the frosting.

   

7. Put Lemon Curd and Mascarpone together in a bowl and mix them well together.

   

8. When the cake/cupcakes are ready, wait 30 minutes and frost it with the Lemon frosting you just prepared.
