Ingredients:


  1. 125 grams gluten-free / plain flour
  2. 1/8 tsp xanthan gum if using GF flour
  3. 2 tbsp caster sugar
  4. 2 tsp baking powder
  5. 1/2 tsp mixed spice or cinnamon
  6. 240 ml full fat coconut milk (canned)
  7. 1 tbsp vegetable oil
  8. 1 tsp vanilla essence
  9. 1 oil spray for waffle iron


Preparation steps:


  1. Preheat your waffle iron and spray with oil

  2. Mix all the dry ingredients together in a bowl

  3. Put the milk into a jug with the oil and vanilla. Add to the dry mix slowly, stirring so no lumps remain but don't over mix

  4. Pour into waffle iron and cook until golden, 5 - 7 minutes is my preferred time

  5. Serve with whipped cashew or coconut cream (see my profile for recipes), maple syrup and fruit salad! Yields 8 waffles, 2 per person
